i was under the impression that bhature is a bigger version of poori and is prepared from the same dough.  however, i was corrected last year from my chef friend – vishal gill. he is currently working in one of the famous restaurants here in australia. even the recipe of bhature was shared by him. many many thanks to him and his amazing recipe. any time i have confusion related to punjabi cuisine recipe, i always get clarified from him.

while if you have observed the bhature you get in restaurants are huge in size. it is because the size of the pan in restaurants are huge. it is difficult to have the same in household. well, the size of he bhature does not matter much. it is the taste and fluffiness of bhature that matter. so do not loose hope and make bhature according to your pan size. also, while deep frying bhature, make sure your oil is on high heat. otherwise the bhature would not be fluffy. lastly, if you do not like to add baking soda and powder, skip it. but you need to ferment it for overnight in a warm place.

Ingredients (1 cup = 250 ML)

  • cupchickpea / cholesoaked overnight
  • tbspoil
  • bay leaf
  • inchcinnamon stick
  • ½tspcumin seeds
  • onionfinely chopped
  • tspginger-garlic paste
  • matoesfinely chopped
  • tbspkashmiri chilli powder
  • ½tspturmeric powder
  • tspcoriander powder
  • ½tspcumin powder
  • ¾tspaamchur powder / dry-mango powder
  • salt to taste
  • ½tspgaram masala
  • cupswater
  • tspcoriander leavesfinely chopped

Instructions

  1. firstly, in a cooker heat oil.

  2. furthermore, saute bay leaf, cinnamon stick and cumin seeds till they turn aromatic.

  3. add finely chopped onions and ginger-garlic paste. saute till it turns golden brown.

  4. also add tomatoes and saute till they start releasing oil.

  5. further, add chilli powder, turmeric, coriander powder, cumin powder, aamchur powder, garam masala and salt. saute for a minute.

  6. then add soaked chickpea. make sure to soak chickpea overnight.

  7. followed by 2 cups of water.

  8. further, give a good mix. and check the seasonings.

  9. pressure cook for 7-8 whistles on medium flame.

  10. allow the pressure to release by itself before opening cooker.

  11. mix well and garnish coriander leaves.

  12. finally, serve with bhatura.

notes:

  • firstly, soak chickpea / chole overnight. else they wont get cooked well.
  • furthermore, use canned chickpea to avoid soaking process.
  • also, adjust spices to your spice level.
  • finally, mash few chole to make thick gravy.
