traditional chaklis are prepared with urad dal flour. few steam the flour and alternatively few add boiling water and knead the dough soft. there are many variations in ingredients as well. few do add coriander powder, sesame seeds, black pepper. however, i have just used turmeric powder, chilli powder, cumin seeds, salt and asafoetida. muruku taste great when eaten with coconut chutney, green chutney or plain sipped with masala tea or masala milk.
adding butter while kneading dough makes chakkuli more flavourful. my mom adds coconut milk along with butter to have a rich flavour. i love to have crunchy chaklis as my evening snack along with masala tea or masala milk. my dad used to always say, chakklis are perfect when there are nice pointed marks on it and a clear hole at the centre when you break them. you can also prepare butter chakkuli, palak chakkuli, besan chakkuli, spicy chakli etc.

- 1 cup rice flour
- ½ cup maida / all-purpose flour / plain flour
- ¼ tsp turmeric powder
- ½ tsp kashmiri chilli powder
- ¾ tsp cumin seeds / jeera
- salt to taste
- ¼ tsp hing /asafoetida

- 1 tbsp butter unsalted – at room temperature
- ¼ cup water or as required to knead dough
