in addition to its simple taste, there are several other reasons why it has to be included in our daily diet. firstly, curd rice is very effective for digestion and to beat the heat of spicy masala. secondly, it is rich in calcium and protein which eventually improves the immunity and defence mechanism of the body. lastly, for those who are lactose intolerant, curd is a healthy alternative instead of milk. curd converts lactose present in milk to lactic acid, and hence can be easily digestible.

furthermore, some important tips for a perfect curd rice recipe. firstly, do not forget to add milk while preparing curd rice. milk helps, curd rice to stop it from souring too much and maintain consistency. lactose intolerant can ignore this step. secondly, if you are planning to use freshly steamed rice, than i would recommend you to bring the rice to room temperature and then mix with curd. lastly, adding full cream is completely optional and it only helps to make it more creamy and tasty.

Ingredients (1 cup = 250 ML)

  • cupscooked rice
  • cupcurd / yogurtfresh and thick
  • tspfresh creamoptional
  • salt to taste
  • ¼cupfull cream milk
  • handful of pomegranate seeds / aanar
  • tbspcoriander leavesfinely chopped

for tempering:

  • tspghee / oil
  • ¾tspmustard seeds / rai
  • ½tspurad dal
  • generous pinch of hing / asafoetida
  • dried red chilli
  • few curry leaves
  • cashewscut half

Instructions

  1. firstly, in a large mixing bowl take cooked rice and mash well.

  2. furthermore add curd, cream, salt and milk.

  3. mix well and also mash rice if there are any lumps

  4. also add more curd or milk to adjust the consistency.

  5. further prepare the tempering by adding ghee in a small kadai.

  6. also add mustard seeds, urad dal, hing. allow to splutter.

  7. additionally add dried red chillis and curry leaves.

  8. then add cashews, and fry till they turn golden brown.

  9. further, pour the tempering over the curd rice.

  10. additionally, add pomegranate seeds and coriander leaves.

  11. finally, mix well and serve with pickle or papad.
