Coconut Fruit Cake

Ingredients
8 oz of self-raising flour
8 oz of mixed fruit
2 oz of mixed, chopped nuts
4 oz of desiccated coconut
2 teaspoons of cinnamon
2 teaspoons of ginger
4 oz of butter or margarine
2 oz of caster sugar
2 oz of dark muscovado sugar
4 tablespoons of milk
2 eggs

Method
1. Pre-heat oven to 160 F.
2. Grease and line an 8” cake tin.
3. Place the flour, butter and sugar in a large bowl and rub into until crumbs are formed. Alternatively, use a food processor.
4. Stir in the fruit, nuts, coconut and spices.
5. Add the eggs and enough milk to get “sticky” consistency.
6. Pour the cake mixture into a tin and smooth the top.
7. Bake for 50 – 55 minutes.
